Recipes? I have lots of stinging nettles!

Once you’ve baptized the nettles in boiling water (eliminates their sting) douse in ice cold water. Once they’re cold enough to handle, squeeze them like a wet sponge to get as much water out of them as possible. At this point you can follow any recipe that calls for hearty greens: pesto, ricotta raviolis, etc.
