This is for anyone who might need a dose of wonder (& cake)

After reading the above quote several times over, I felt compelled to make a cake — I’m very subject to the power of suggestion when it comes to cake. Faced with using ingredients that were already in the house I landed on citrus. I love all citrus and always feel rich when I’ve got a stash of lemons in the refrigerator. Pulling out a (giant) sunflower bundt pan that my mom gave me seemed like a good choice for a chilly spring day. I know we’re not supposed to lick the spatula but I couldn’t resist, and it didn’t disappoint. The cake took forever to bake — hey, no shade on my well-loved and charred pizza stone pictured above! To be perfectly honest the enormous cake was a bit of a disappointment in the end. I was looking for seriously punchy lemon cake, this one is delicious but demure. However, should you feel compelled to make a cake this week, I highly recommend this recipe for “Poppy Seed Lemon Cake” from deb perelman. It’s amazing and zingy with lemon!
Check in with friends and family to see how they’re doing and think about making them a treat to sweeten their days. Cake is the answer to many of life’s challenges.

I’m surprised you had to read the quote several times before needing to bake. The only thing stopping me is I already have a cake on the counter!
